  7. 1 shallot, chopped fine
  8. 1.5 oz. whiskey
  9. 1 cup lobster stock 
  10. dash lemon juice
  11. 4 tbsp butter
  12.  
  13. Saute shallot in small amount of butter. Add whiskey and flame.
  14. When flame dies, add lobster stock and lemon juice, and dash of
  15. salt. Reduce by half. Add remaining butter and blend 'til mixed.
  16. Pour over grilled lobsters.
